Colombia Maragogipe Rainforest Alliance
What an amazing bean! It's huge! We only offer this coffee in whole bean, so you can see for yourself how remarkable a variety Maragogipe is (it's hard to grow and has smaller yields than other Arabica varieties). I feel like I finally understand this fragile bean: Despite its hugeness, it is really delicate. Roasting Maragogipe has been a challenge not to destroy the subtle aspects of the bean (which is lighter in mouthfeel than our Zimbabwe coffees), but to bring out the nuances the bean has to offer.
This exclusive Specialty Maragogipe coffee is grown at over 4,000 ft. above sea level on the fertile lands of the beautiful “El Boton” Estate, and only 650 pounds of "Arabiga Maragogipe" green beans are produced a year (we got lucky, eh?). El Boton received the Rain Forest Alliance® certification early this year. The Rainforest Alliance works to conserve biodiversity and ensure sustainable livelihoods by transforming land-use practices, business practices and consumer behavior.
Altitude: 4300 ft above sea level
Aroma: Floral notes with a hint of cinnamon
Acidity: Pronounced Brightness
Body: Medium-light
Flavor: Apple-y with a hint of caramel in the middle, finishing buttery on the tongue (very slightly astringent for a moment at the end)
TIP FOR BREWING: Do not brew at too high a temperature! I have made French presses of this at about 200-201 degrees water temperature, and find the coffee responds best. When I brewed at 205 it destroyed some of the characteristics of the bean.
